I absolutely love crackers. They're my vice. I find that store-bought crackers are often very salty though, as well as coming in an awful lot of packaging.

After having a play with some ingredients, my daughter & i managed to create this recipe for cheesy crackers. They're nut-free so that she can take them to school.

Ingredients

  • 1/2 cup wheat bran
  • 1/4 cup sesame seeds
  • 1/4 cup flax seeds
  • 1/4 cup Parmesan, plus more to sprinkle
  • 2 tsp onion powder
  • 1/2 tsp garlic oil
  • 1/2 cup flax meal
  • 1/4 cup wholemeal flour
  • 1 tsp salt
  • 1 cup water

Instructions

Pre-heat oven to 180 celcius

In a large bowl, combine all dry ingredients & combine evenly

Add the water bit by bit, stirring between, until a dough forms

On a sheet of baking paper, roll the dough to the desired thickness (I prefer around 2-5mm. The thicker they are, the less crunchy they'll be.

If you want uniform crackers, you'll need to carefully run a knife through the dough to create the shape you want. Otherwise, place the baking paper onto a tray.

Sprinkle some parmasan over the top of the crackers

Bake for around 20-30 minutes or until brown. Be careful to check them before you remove them from the oven as if they aren't cooked enough they'll be chewy rather than crunchy.
