Mandarine, blueberry & bran breakfast muffins

Total Time: 25 minutes

I created this recipe by accident but it worked really well. I meant to use orange instead of mandarine but found I'd forgotten to buy one so had to make do. It turns out that the mandarine gives them a really fresh, almost sherbert-like flavour.

I'm really happy with how these turned out.


  • 2 cups SR flour of your choice
  • ¼ cup bran
  • 1 mandarine, zest only
  • ½ orange, juice only
  • ½ tsp vanilla bean paste or essence
  • ¼ cup yoghurt/plant-based yoghurt
  • ¼ cup soda water


Preheat oven to 200 C

Place all ingredients into a large bowl & combine until a dough forms.

Add some soda water or more flour as needed

Form rough balls with your hands & place them on a lined baking tray (you’ll need to be careful so that you don’t squash the blueberries

Bake for around 10 minutes or until lightly browned

Remove & place on a cooling rack or eat them right away!
