Sweet potato chocolate chip scones

The moisture from the sweet potato makes scones are so soft & fluffy they practically dissolve in your mouth. They make a great, satifying treat & are especially good with a hot cup of tea.

Ingredients

  • 2 ¼ cups SR flour
  • 1 small sweet potato, baked until soft
  • ¼ cup soda water
  • ½ tsp vanilla bean paste or essence
  • Around 2 sq lindt 85% chocolate or similar, cut into shards

Instructions

Preheat oven to 200 C

Peel the sweet potato, place it into a large bowl & mash it into a puree with the back of a spoon

Add all other ingredients & mix until a soft, sticky dough is formed

Spoon out your scones & place them onto a lined baking tray

Bake for around 10 minutes or until lightly browned

Eat them straight away or place on a rack to cool
