Who doesn't love PB&J!!
This slice makes a delicious & filling breakfast or snack.
You can replace the nut butter & berries with other similar items if you choose.
- 1 ¼ cups rolled/traditional oats
- 2 cups plain flour of your choice
- ½ cup peanut butter (100% peanuts)
- ¼ cup butter/vegan butter melted
- 1 ½ tsp baking soda
- ½ tsp salt
- 3 cups berries of your choice (I used strawberries)
- 2 tsp ground cinnamon
Pre-heat oven to 180 C
In a saucepan, place the berries & chia seeds on a high heat, stirring regularly until it begins to thicken. Remove from the heat to cool
In a food processor or high-speed blender, blend the oats until they are a course-flour like consistency
Add the flour, salt, baking soda & cinnamon & stir until well combined
Add the peanut butter & melted butter to the dry ingredients & mix until it clumps together. If the mixture is too dry, add a little water
Place around ¾ of the mixture into a lined baking tray & press firmly until it’s evenly distributed & tightly packed
Place the cooled jam on top of the base & spread out evenly
Crumble the remaining oat mixture over the jam
Place in the oven & bake until the crumble is golden brown
Allow to cool, then slice your brekkie bars into whatever shape you like.
